Guess you're all clear. But I'd call up the embassy and make sure if they can give you more information regarding this. It sounds like that since you're an EU citizen you can live there until the day of expiring in your passport although I suggest that you sit down with someone from the French embassy to make sure you fully understand what is happening (just for your peace of mind). ^_^ Good luck you'll love France.
Edited to add: Sorry I thought you just wanted to work or live there. You'll have to talk to the embassy for migration but you'll have an easier time of it since you're Polish. Theoricially you should be able to use your Polish passport to stay in France then when you've lived there long enough you can apply for citizenship. You'll have to renounce either the Polish or the US citizenship then.
Since you have nationalities from countries that are not considered economically nor politically oppressed, you will have a hard time migrating to France legally. My suggestion is for you to marry a Frenchman. Bonne Chance!
