You must file sanctuary with the church you decide to use and have proof of a non violent crime or a reasonable doubt filed with an attorny. Usually, sanctuary is only used by Catholic and Episcipol churches. As a religion they withold the right to sanctuary and it is only for a limited time. You will have to surrender any and all weapons to the clergy and follow the churches requirements of sanctuary such as daily prayer, vigil, and confession. Also, you will be required to speak with the highest cleric daily about your situation and religous needs. A lot of stuff just to escape persecution temporarily.

Generally, no. A church has no authority to shield you from criminal prosecution. Even priests and ministers can be charged with harboring a fugitive, not sure there are many willing to go to prison with you. If you're convicted, yet weren't hauled away from the courtroom, I can only assume it was some sort of white collar crime that they allowed you time to get your affairs in order before starting your sentence, and if that's not the case then you must be an escaped convict ... turn yourself in to avoid getting any innocent people hurt.
Not necessarily. The government can arrest people even if they're hiding in a church. The government has chosen not to do that in some cases with illegal aliens, but it still could arrest them if it wanted to, and it could arrest you if it wanted to too. Although maybe you'd get lucky and it wouldn't want to.
