USCIS interview for fiancee and spouse visa? Will they ask about third parties?
I've kept all our letters and travel receipts when I've visited him, but I was wondering how in-depth they ask about the initial contact/interest itself.

Yes, when your fiance goes for his fiance visa interview in Mexico, he shall take lots of documents, photos, receipts, etc -- as a proof of your "fiance relationship".
Consul has right and most likely will ask how you two met. Your fiance can explain how, and likely it should be sufficient. Many people nowadays meet through Internet, and communicate via email for some time prior to meeting in person.
Consul may ask more about him meeting you in person (because it is a precondition for a fiance visa).
