I'm in the same situation as you except that I'm a canadian waiting for my I-129 and I-130 interview. Canada and the US have an agreement which allows canadians to be in the US for a 3 month period. I cross the border in late december and it wasn't easy. Basically you have to prove the border agent that you will go back to Spain for your interview. I brought all the information I had, and if you are able to show a tie to your home country and a return ticket, it should be okay. I used the lease of my apartment and a return ticket as well as a date for my interview and he let me go through. So I wish you the best of luck because I feel your pain and frustration!
You could possibly go for a short visit, assuming of course that the CBP (Customs & Border Protection) will allow you entry to the USA. The fact that you have a K-3 filed shows the CBP that you have intent to immigrate and they have the right to deny you entry to the US, even with a B-2 visa.
However, to increase your chances of gaining entry to the US, you can bring with you evidence of strong ties to Spain, that would prove to the CBP that you have no intention of abandoning the K-3 to simply come to the US and join your husband permanently without benefit of a valid immigrant visa.
