What are the risks involved in leaving my employer, working for another and using my EAD before my AOS/I485/Green card is approved? I have my EAD and I have Advance Parole.

Is AOS based on I140 through EB category?
If so,
if AOS is pending less than 6 months, don't do it.
If more than 6 months, law allows you to do it, as long as you will work in same/similar industry for similar position.
