Tell your fiancée to go to the British Embassy in Poland. My husband (from USA) took the relevant documents and evidence into the British Embassy at 10am and collected it at 4pm the same day in Chicago. I am not sure if they work like that in Europe but she will be able to find out if she gets in contact with them.
As has been said, Polish citizens do not need visas to travel to the UK. They also do not need authorisation from the Home Office to marry here, unlike non-EU nationals without permanent residence.
If the person is a non-EU citizen applying from Poland, I'm not sure, if the application is straightforward I think about two to three months. The Home Office have to be satisfied that it is a genuine marriage, that the parties have met, that the UK partner can support and accommodate the other without need of public support, etc. If there is any doubt on any of these points, it will be worthwhile to get professional help. A refusal can be appealed against, but this will take anything up to a year to be sorted out.
