I'm filing I-485,I-130,I-765, I-131 at the same time, while the case is pending, can I take a short class?

like a language course, or a short course at a college around the area? Would I have to apply for I-20?

Your question does not state your current status.

However if you are taking a short class at community college, it should not be a problem.

I-20 is issued for people who want to file for student visa. You are not.

Admission rules will depend on the school.

Once you file the applications, you definitely will have no problem. Filing receipts are normally received within 2-3 weeks (if filing is done correctly).
Homeland Security will see that you are filing all of these at the same time...which obviously makes no sense. This won't help your cause.
