Answer:
You may go to “Tools” Menu and select “Unprotect Document” if it was composed with “Protect Document”.
If the original composer has used a Password to “Protect Document” then you may have to get the Password and enter it before you are able to do “Unprotect Document”.
PS. To the lady (Anj) above me: you may have taken a wrong impression about the intention of the Asker. She is not going to temper the document, rather would fill-in the blanks and modify or correct the one sent to her by e-mail attachment for editing. Thereafter, the original sender could make the final print-out and seal and/or sign on it to make the final valid documents.
This is normal practice in business too where we send the Proforma Invoice or Sales Contract as MS Word to the Buyer and they would edit (if needed) and then send back to us for our making the final print-out.

Such applicants have made an application in bad faith and should not be able to qualify under the scheme.
You need to contact their emabassy in your country for the official visa application documents. If this is urgent, let them know! They may be able to fast track it, but i would imagine it could cost more! I needed to do this when applying for a visa to China. Good luck! but forget about changing the document!
