You need some serious help. Your child is an American citizen by birth. You don't need your name on a Philippine Certificate of Birth, in fact, since you're not married they won't put it on there under any circumstances.
You need to go to the US Embassy in Manila and file a Report of Birth Abroad of an American Citizen. Since you are not married and on the Birth Certificate the embassy will have you and the baby get tested for paternity using DNA. Once the match is established the child will be issued a US passport and Social Security Card.
Do you really believe the US embassy will process her for a K-1 visa with a new born baby unless there's proof the baby is yours? Let me tell you, it isn't going to happen.
Save yourself the aggravation and another year of waiting by doing it right.

What in the name of God were you thinking? Why didn't you fly over there and get married before the child was born? You are going to have to prove the child is yours now and the DNA testing isn't going to be cheap. My guess is that you could have paid for your airfare with what's it's going to cost.
It's best to just follow the previous answer, regardless of your wishes. If you anyhow make the DHS doubt that you fathered the child, it can be cause for either a delay or denial of your fiance'es case.
