As long as you are able to show that you won't become a public charge you will be fine. The I-134 when used, is one thing that a conof may use to determine if the applicant will or wont become a public charge. There is no provision for a Joint Sponsor with the I-134, only a sponsor. It is not like the I-864 that has a provision to use a Joint Sponsor (which you will need with the adjustment of status process once in the US). The US fiance/spouse can be the sponsor if they meet the requirements, or one can use a close family member or friend. If your fiance's mother meets the requirements then she will be the sponsor. Many are in the same position as you with USC fiance or spouse being a student, and many successfully are granted a visa. It is at the I-864 stage when things can get a little sticky as the I-864 is much more detailed. It is also legally binding whereas the I-134 is not.
Edited to say: I repeat....there is no Joint (Co) Sponsor with an I-134. This is a perpetuated error, by using certain policy and rules of the I-864 with the lesser I-134.

It is very important that the financial documents you show to The Immigration Dept. ( of the US Embassy in Ottawa, Ontario Canada - I assume ? ) is sufficent to meet the minimum financial needs of both of you as a couple. Your Mom is down as a " co-sponsor " I assume from what you say. So I hope your Mother's income is enough to allow your Canadian Fiance into the USA ( thru a K-1 Visa ). If it is not - you can re-apply and pay the fees again - once your financial circumstances change.
