Can I start working without a National Insurance Number in the UK?
Besides the NIN, are there other specific documents I must have in order to work in the UK? (I know I don't need a work permission).

You can start work without an National Insurance Number, but they may take big chunks out of your pay check if you don't have one. You have to make an appointment at a Job Centre to be given a temporary, then permanent number.
Make an appointment through HM Revenue and Customs at this number: +44(0)845 600 0643. It takes about 10 minutes to get all the information and the London offices tend to be booked up 3 weeks in advance. If you are in a hurry though, just register your information and keep calling back in case there is a cancellation.
They will then refer you to a local branch, where you have to show up in person with all the documentation that you have either found work or are looking for work.
