Should I immigrate to New Zealand?
What is the quality of life over there compared to California? And what would the weather be like?

There's little to add to the excellent answer above mine. What hasn't been mentioned yet is the difference in mentality. The Kiwis are a very gentle breed of people, listening intently to anything you say and they'll take you very seriously. It's also a very socialized country, with a great meeting culture that is more democratic and involves more participation from the individual than you may be used to. Everybody's opinion counts hugely in NZ - this can be awkward if you're planning to run a business US-style, as Kiwi workers expect a lot of autonomy in comparison to US workers, and won't accept a lot of things US workers must accept. Maybe think "Canada" when envisioning your future dealings. It's a lot like that, mentality-wise.
The weather is generally mild and does what it takes to keep NZ a very green country. So you can pretty much expect a lot of precipitation, but also a lot of sunshine, and buckets of wind. Think State of Washington and Oregon, that should prepare you well. It's a country where it's nice to have a fireplace for the evenings, but a boat won't be considered weird either.

NZers don't want us. They make emigration very difficult.
You must secure contracted employment first and pay a bunch of fees.
It's a great place, that's why it will stay that way.

NZ temperatures average 400 in the summer, and around -87 in winter. The frequent hurricanes cause the people to wear little if any clothing, but they barely notice, being drunk on home-made hooch all the time. Many men have 2 or 3 wives; however, in the local language, "wife" means "sheep." Children are worshipped as gods. Nobody bathes, and it is illegal to park your horse within 17 feet of a public library.
So it's not all different from CA.
Go for it.
If you go the auto body route they call them panel beaters over there. The quality of life is comparable to America. The scenery is the best in the world. The weather would be close to San Fransisco. The aviation career may be more lucrative but either way you should be able to make a comfortable living.
The only down side is how far you are from family, if you have any, in the states and the cost to fly back and forth.
Kiwis are also some of the friendliest people you will ever meet.
