You've heard wrong. The working holiday visa, you must be under 28, but that's for backpackers. I went to Oz for a long time at the age of 28 on a long term business visa, which I could have transformed (and I was very close to) into citizenship. It lasted until I was 34, but could quite easily be extended.
I imagine the US is slightly stricter, but there is no age limits to these things. Just the backpacking visas.
Age cannot be a discriminating factor in the United States unless the job had physical demands like some police and fire jobs cut off in the early 30's so yes someone approaching forty can still live and work
In US, you can get green card by following ways:
Marriage to US citizen or green card holder.
on the basis of employment sponsorship.
investment of 1 million dollars.
Diversity visa - if you are from a certain country and your country is one of the countries on the list issued by Dept. of State.
None of these have age related bars.
