No. As long as you have the right paperwork to travel outside the US and get back it shouldn't affect the processing time of the adjustment of status. You might want to remember the dates of the trips outside the US because you will have to indicate that in your application for naturalization.

No, they will not. The process goes on. You or the person in this situation must make sure not to be gone for too long. If you get an appointment and you miss it, they'll asume you don't want to go on with the process and they'll stop it for good and you'll have to start all over again. They don't play and they couldn't care less if your mother is dying.
Make sure you're in your home when the papers arrive. Don't count on the fact that they are slow... you might get a surprise.
