Answer:
There are no exceptions. Once you have applied for the extension (as Jim says) then your current leave will automatically extend until the HO extends your leave or (since you applied in time) any right of appeal has ended.
I am surprised that you have to produce specific docs since you obviously presented them in the past to get the EC. You are just looking for a paperwork extension to suit the change in the law. Have the HO asked for this or are you just imagining that they want these docs?

You could of course have asked for the SA documents to be sent many months ago. This is yet another case of someone trying to wriggle out of the rules because they failed to do what they should have done.
I suggest it would be easier for you to return home and get the documents you need, then re-apply.
I don't really understand your situation, but in general your status remains OK while an extension applicaton is being processed; but you could have a problem if your application is refused due to lack of documentation. In that case, although you could appeal, you would possibly have to return to SA and apply again. I should get some legal advice from an immigration solicitor on this - usually they will give you a brief consultation free of charge. The following link gives some info about ancestry visas:
