Just before you hit 16 you get a National Insurance card with your national insurance number on it, and that's enough to start you off in your first proper job. When you leave you get a P45, part of which you give to your next employer; it has your tax, NI etc details on it.
At the end of the financial year you should automatically be given a P60 which gives you a breakdown of the tax you paid, your tax code etc for that year.
A tax number. What is that? Don't you mean a National Insurance number. You need to go to your local social security office. Every UK citizen is issued with one at the age of 16. If you're a citizen, you should have one.
If your new employer doesn't give you one the Inland Revenue will oblige (especially if you are going to be self employed)

I think you mean a national insurance number - which you would have been given as soon as you got your citizenship - if you are referring to tax - I think you mean your tax code?
Your employer's tax office will assign you a code - you can call them to find out what it is, but usually they write and give you the tax coding notice and ask if you feel it is correct for your circumstances.
