Well i'd find out if he ONLY eats red food or if he eats any food with some red in it. Then figure out why if he doesn't tell you then you can adjust your cooking to him or get hime to cook from now on... he is the one who is limiting your cooking.

If he is not hurting anyone, why is it so bad to let him eat red foods? In all seriousness it sounds like he has a bit of obsessive compulsive disorder. If he acts like this over a lot of things then he may have a problem, but if this is the only thing and he insists on eating just red food, what the big deal?
That's very different. I've never heard anyone say they can't eat something because of it's color. You should try to find out why and then let us know! It might just be a phase that he'll grow out of. If you want to help broaden his food horizons, why don't you ask him to try one thing that is less red (pink) and then eventually a different color.
