Since the networks that you are talking about are based within other countries - I would think NONE of them are documented to be within the United States or would be unless they were coming here.
I would say none because Univisión and Telemundo are American tv stations and they would have to have green cards in order to work there.
How do you know they are undocumented? Just because they are Mexican?
By the way, I don't think there are any "soup" operas.

none are undocumented. Maybe the ones you know are aspiring actors that got false documents, at the end they will be found and deported.
none. they have visas for entertainers...such as bands, singers, actors, etc..
also, Univision and Telemundo are not exclusively US companies. you don't know where all of those shows are being filmed.
also, if you've noticed...many of the news anchors have chicano accents. they were born and grew up in the US. a US spanish speaker sounds very different than a mexican spanish speaker, or agentinian, peruvian...etc...etc...
