that the one glaring reason is that they're willing to (and do) work for under minimum wages? They do the work that noone else wants to do for pocket change, so unless the people who are allegedly having their jobs stolen want to do the same, why are they making such a big deal about it?

I don't understand why anyone says they are taking their jobs. In my area farmers have already been in my local newspaper talking about not having enough workers to pick their crops last year and asking anyone looking for work to come see them from what I heard they are willing to pay above minimum wage. Sounds to me like there are plenty of jobs to go around.
Because if they had to hire people with papers, they would have to raise the wage, then more people would do the job.
