You are going to go through all the trouble of filing a K-1 Fiance visa and MAYBE marry her when she arrives in the US? It's an expensive and long process to go through if you are not entirely sure you want to marry her.
What you can expect is a waiting time of 6-12 months. You will need to file the forms (I-129F & G-325A) and submit proof of an ongoing relationship, along with financial documentation showing you will be able to support her when she arrives.
The Embassy in China doesn't issue visa's easily as it's considered a high visa fraud country, if your evidence of relationship isn't strong enough, (and sounds like it might not be, if you're not entirely sure you want to marry her) it will be denied.
