US Citizen going abroad to study for an MBA, wife awaiting to remove conditions on Residence.?

Since we want to go away for 12 months to Hong Kong that creates 2 problems for us.

One, she can not leave the US for longer than 6 months.

Two, according to the time line the INS has, they are going to call her back in in about 3-4 months for more paperwork, etc.

I think there is a way to speed up the removal of conditions on residence process if one's significant other is leaving the US for a job, but in my case, its education, pursuing an MBA.

Would that qualify for a speedier process, without us having to come back here for additional interviews and not have to worry about staying outside of the US for longer than 6 months?

Your need to study overseas will not speed up the process. Your wife cannot leave, if she does and misses the interviews, she will have to start from scratch all over again.
This is a hard one, I had a similar problem but they let me go since I was going for active duty while I was in the navy.
If you are going to school in Hong Kong, what I would suggest it for you to leave by yourself and head there earlier than she does, let her finish all her paperwork and all the restrictions that she needs to do, so that she can go and have her citizenship. This is what my younger brother did, because his wife was in the same situation and the INS didn't let her go because they say that was the rule and had to be followed, which I think it was stupid, but that was the rule.
If I were you, the safeway to do it is to ask one of the INS agent and ask if it was permitted, they might allow it on case to case bassis.
