What is the procedure for adjustment of status for my wife who entered the U.S last week?
What is the process and where do I begin? I called an attorney but he is crazy he charges 1500 just for the application which I think i might be able to fill out myself? Will she be interviewed again?

OK Situation is like that:
1. She got an CR-1 visa. Its not a green card..
2. Once she crosses the border, this visa becomes Green Card, and she will have stam (551) in her passport. Actual GC will be sent.
The trick is , if she enters US, after second anniversary of your marriage, Then She will be granted a regular GC, If she enters Before, the she will be granted a 2 yr "conditional" card. 2 years after, before it expires, youwill need to apply to remove conditions. You will need todsend a lot of proof that yu are husband and wife. Like bank accounts, photoes, sworn affidaviots from friends. Usually at this stage there is no interview, but if Immigrationhas questions yu will be asked to apper at Immigration office (About 5-10 % cases). Let nme know if uiit is unclear.
If your wife entered on an immigrant visa (IR / CR-1) there is no adjustment of status process. What she has is permanent residence status - With conditions if married less than two years on entry and granted a 2 year Green Card - No conditions if married two years or more and granted a 10 year Green Card. If she was granted permanent residency with conditions i.e. 2 year Green Card, there is nothing to do until 90 days prior to the two year anniversary of having entered the US, where she will apply to remove conditions.
