Concerning a K-1 Visa, I live in Canada and have no Criminal record but got a ticket for tresspassing..?

The ticket wasn't put on my criminal record it was just a provincial offence notice.. will this affect my application?

It should not. You were not arrested so I can't see any need to report it as such. Still, if asked about minor infractions do not lie. Tell the truth. Trespassing is not one of the crimes that can exclude you from immigration.
You are not required to disclose that conviction on the K-1 visa application (Form I-129F: Part C, Question 2). A trespassing offense also shouldn't affect your eligibility for visa under the criminal grounds of ineligibility (trespassing is not a "crime involving moral turpitude").
