Why was Mexico so terriable that both Texas & California faught and won their independence ?

As noted above, one of the prime motivations of those wanting Texas to be independent from Mexico was their desire to hold slaves.
On the other hand, there were really four sides in California, and slavery was not an issue. There were the US and Mexico, there were the Bear Flag Republic folks (mostly English speaking) under John Fremont in Northern California, who declared an independent republic then immediately ceded power to the US, and there were the Californios in Southern California (mostly Spanish speaking) led by Andres Pico who were abandoned by Mexico, then defeated by the Americans.
The primary interest in both cases appears to have been land (the discovery of gold was still in the future). Fremont spread a rumor in the North that the Mexican government was going to dispossess Anglo settlers from their lands. In the South the Californios feared dispossession should the US take over (and were largely proven correct).
The people that fought for the independence of both states from Mexico were the settlers that headed west. So really, they just wanted to keep with the government they started with before settling the new area.

Actually Texas and California didn't fight for independence. The new settlers wanted that land and decided that they wanted to fight over it.
Americans always think they can go take over countries and think they have a right to do it. That's why so many other countries hate us.
Hey, don't fold in California with the heroes of the Alamo. California didn't fight for squat. Texans fought for independence for a number of reasons, one of which unfortunately was the fact that Mexico prohibited slavery. Certainly the Texans and their needs were pretty much ignored in Mexico City, however.
