My K3 Visa is about to expire and my Green Card hasn't been approved. What are my options?

You'll need to contact INS and get their advice. For most instances, when you apply for a green card your status is protected until your application is reviewed as long as you applied prior to the expiration date (which you did). You will need to go to the INS office and extend your work authorization. You have to keep doing that until your green card is approved. Most likely, you won't have to do anything else, but you should talk to an INS agent while you're at the office to see if you need to apply for an extension of your visa. They can help you. Do it before ANYTHING expires. Once it expires, you're out of luck. So go ASAP to take care of everything. Don't worry about it. As long as you're in the process, you'll be fine!!

Your spouse should have filed Form I-130 Petition for Alien Relative and Form I-485 Application To Register Permanent Residence or Adjust Status as soon as you arrived in the US. I am assuming (s)he did or you wouldn't already have an I-766 Employment Authorization card.
Forget the K-3; once they accepted the I-485 application you are fine. You can stay here until and IF they deny your I-485 - which is unlikely. Typically the wait between filing the I-485 and going to the interview to get your green card (it's actually white) is about 18 months, so in the mean time just file another I-765 to renew your work permit.
