I have H1B visa, and was applying as EB2. I just got my PERM labor certification approved. I'm in the process of filing form I-140, I-485, I-131 and I-765. When can I quit the company I am working at (the sponsor)?

I believe you could quit your company after you get the green card. You have to file 140, then Adjustment of Status and then you can quit the sponsor.

Don't listen to that xenophobe. Most Americans aren't like this. I would say that it is dishonest, however, to just use your sponsor company to get in here legally and then abandon it.
You would wisely obtain equal or better employment before quitting. Consult your personnel department.
