Why don't people bother to look things up before they answer questions? You do NOT have to have a current passport to apply for an adjustment of status; you just have to have a passport at all, plus your US visa and your I-94 card. If you are marrying a US citizen, you can file both the I-130 petition and the I-485 Adjustment of Status at the same time. Here is how it's done:

Yes you can ask her to sponsor you and have an extension on your visa. That is possible and you have to approach the us consulate and the country where you are from their office, to find out more details.
You can stay back for your wedding but please check the rules and policies. It is not impossible and be ready to spend for an extension as well.
Have a lovely wedding and all the best for your future.

Yes you still have to have a valid passport from your home country. You should start now on getting it renewed, it could take longer to get the new one before you get your residency card.
dognhorsemom is correct. As far as the passport goes, you only need to submit a photocopy of the biographics page of your passport when you file for adjustment of status.
