You do not say what your qualifications are, but it is likely that you stand a better chance of getting in on a work-based visa. Sadly, the chances of a plumber getting in are slim. The USA can produce those in sufficient numbers. Now, what you need to do is speak with a US immigration attorney. Look at the link below. You may find a member in the UK.
You will certainly need an employment sponsor, which brings me to my next point (and why I suggest speaking to an attorney now). You getting in without using an attorney will be easy if you can find a sponsor - the sponsoring company takes care of that. However, your boyfriend stands little chance unless you get married (but you may want to confirm that with an attorney).
Employment-based visas are becoming harder to get. This will not be easy and you will need to do a lot of legwork, even with an attorney. If you want some pointers you might try calling the US Embassy's premium rate phone line (2nd link). They should be able to answer the question of your boyfriend getting in. However, at 1.20 a minute it may be more expensive than a lawyer!
Have you tried visiting any employment-based immigration message boards? That will be a much better resource than a more general board like this one?

You can apply at the American consulate in England. The process is slow and difficult since so many people want to move to the USA.
look for a sponser in your field...by looking for an employer and if he wants you he can sponser you.
